Our vineyard is located in the village of Chablis, in the
very heart of the Chablis country, on the left bank of the Serein River,
with a south-south east exposure. It is located in the climat Les
Pargues. The soil is kimmeridgien calcareously clay which goes back to
the upper jurrassic age (portlandien). Density plantation: 6500
vines/ha. Average age of the vines: 47 years. Harvested by hand, carried
by small trailers which unload the grapes by vibration to avoid
crushing, then we use a sorting table to eliminate unripe or damaged
grapes. Cool racking and temperature-controlled fermentation. Aging on
fine lees for 10 month.
The winemaking and aging are all done in stainless steel vats.
